Christmas-inspired ramen with pork loin and pak choi

  • 1 yellow onion
  • 1 tsp Sichuan pepper
  • 1 tbsp neutral oil
  • 1 tablespoon minced garlic
  • 1 tbsp crushed ginger
  • 1 whole star anise
  • 0.5 cinnamon stick
  • 1 liter of ready-made ramen broth
  • 2 tablespoons Japanese soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp Sesame oil dark-roasted
  • 0.5 tbsp honey
  • 400 g pork loin
  • Salt & black pepper
  • 1 tablespoon oil for frying
  • 2 pak choi
  • 4 servings of ramen noodles
  • SERVING
  • 2 scallions
  • 150 g sugar snap peas
  • 180 g bean sprouts
  • 2 dl shredded red cabbage
  • 1 tbsp toasted sesame seeds
  • 4 soft-boiled, halved eggs
  • Chili oil or Sriracha (to taste)
  • 1 gul lök
  • 1 tsk Sichuanpeppar
  • 1 msk neutral olja
  • 1 msk Vitlök krossad
  • 1 msk Ingefära krossad
  • 1 Stjärnanis hel
  • 0,5 kanelstång
  • 1 liter färdig ramenbuljong
  • 2 msk japansk soja
  • 1 msk risvinäger
  • 1 tsk Sesamolja mörkrostad
  • 0,5 msk honung
  • 400 g fläskkarré
  • Salt & svartpeppar
  • 1 msk olja till stekning
  • 2 pak choi
  • 4 portioner ramennudlar
  • SERVERING
  • 2 st salladslökar
  • 150 g sockerärtor
  • 180 g böngroddar
  • 2 dl strimlad rödkål
  • 1 msk sesamfrön rostade
  • 4 löskokta delade ägg
  • Chiliolja eller sriracha (efter smak)
Instructions
Cooking Mode
  1. Chop the yellow onion.
  2. Lightly grind the Sichuan pepper.
  3. Heat oil in a saucepan. Add the onion, garlic, and ginger, and sauté for a few minutes until fragrant. Add the star anise, cinnamon stick, and Sichuan pepper, and let them sauté for 1–2 minutes to allow the spices to release their aroma.
  4. Pour in the prepared ramen broth. Add soy sauce, rice vinegar, sesame oil, and honey. Let it simmer over low heat for 20–30 minutes so the flavors blend together.
  5. Slice the pork loin into 4 slices.
  6. Season the meat with salt and pepper. Sauté it in oil over medium heat until it is golden brown and cooked through. Let it rest for a couple of minutes, then slice it.
  7. Cut the pak choi in half.
  8. Cook the ramen noodles according to the package instructions. Quickly boil or steam the pak choi for 1–2 minutes until it softens but is still crisp-tender.
  9. Top the ramen broth with slices of pork loin, pak choi, green onions, sugar snap peas, bean sprouts, red cabbage, sesame seeds, and a soft-boiled egg cut in half.
  10. Drizzle a little chili oil or Sriracha on top for some extra heat.

Want to make it feel even more like Christmas? Add a small piece of dried orange peel to the broth while it’s simmering. For a rounder flavor, stir in a few drops of yuzu juice or lime juice right before serving. For a vegetarian option, you can substitute marinated tofu for pork loin and use vegetable broth with miso.
