Bang Bang Chicken

A flavorful chicken dish that gets its name from the fact that the chicken is pounded and then shredded. This texture allows the chicken to absorb the flavors of the sauce wonderfully. The dish is topped with roasted Sichuan peppercorns, which add aromatic notes and a slight tingling sensation on the tongue.

Bang Bang Chicken
Ingredients

  • 600 g chicken breast fillet
  • 5 dl water
  • 2 scallions
  • 3 cm of ginger
  • 1 tsp salt

SAUCE

  • 0.5 dl Japanese soy sauce
  • 2 tbsp Chinkiang vinegar or regular rice vinegar
  • 1 tbsp sesame oil
  • 3 garlic cloves
  • 1 tablespoon crushed ginger
  • 2 tbsp granulated sugar
  • 0.5 tsp five-spice powder
  • 2 tbsp crispy chili in oil
  • 2 tbsp neutral oil

SERVING

  • 1 tsp Sichuan pepper
  • 1.5 dl cucumber
  • 3 scallions
  • 1 tbsp toasted sesame seeds
  • fresh cilantro
  • rice
  • 600 g kycklingbröstfilé
  • 5 dl vatten
  • 2 st salladslökar
  • 3 cm ingefära
  • 1 tsk salt

SÅS

  • 0,5 dl japansk soja
  • 2 msk chinkiangvinäger eller vanlig risvinäger
  • 1 msk sesamolja
  • 3 st vitlöksklyftor
  • 1 msk ingefära krossad
  • 2 msk rörsocker
  • 0,5 tsk five spices
  • 2 msk crispy chili in oil
  • 2 msk neutral olja

SERVERING

  • 1 tsk sichuanpeppar
  • 1,5 dl gurka
  • 3 st salladslökar
  • 1 msk sesamfrön rostade
  • färsk koriander
  • ris
Instructions
Cooking Mode
  1. Cook the jasmine rice according to the instructions on the package.
  2. Slice the green onions into pieces about 3–4 cm long and thinly slice the ginger. Bring the water to a boil in a saucepan and add the green onions, ginger, and salt.
  3. Gently add the chicken and let it simmer over medium heat for about 20 minutes.  
  4. Remove the chicken from the pan and let it cool.
  5. Pound the chicken with a rolling pin or similar tool, and pull the fillets apart into thin strips.
  6. Finely grate the ginger and garlic and place them in a bowl. Add the remaining ingredients to the sauce.
  7. Pour the sauce over the chicken and stir.
  8. Toast the Sichuan peppercorns in a dry skillet, then grind them in a mortar.
  9. Serve the chicken on a platter or in individual bowls and sprinkle with the toasted Sichuan pepper.
  10. Peel and dice the cucumber. Slice the green onion. Sprinkle the green onion, cucumber, and cilantro over the chicken, and top with the toasted sesame seeds.
  11. Serve with boiled jasmine rice.
