Pad Thai with chicken and oyster mushrooms
A super classic, featuring both oyster mushrooms and chicken.

Ingredients
- 300 g wide rice noodles
- 300 g chicken breast or thigh fillet
- 100 g oyster mushrooms
- 4 tbsp canola oil
- 2 eggs
- 4 garlic cloves
- 2 dl bean sprouts
- 3 scallions
- 1 carrot
- 100 g white cabbage
- 4 tbsp tamarind paste (optional)
- 4 tbsp fish sauce
- 3 tbsp light soy sauce
- 2 tbsp palm sugar or granulated sugar
- 1.5 tablespoons rice vinegar

- 1 dl peanuts
- fresh cilantro
- lime wedges
- 300 g risnudlar breda
- 300 g kycklingfilé- eller lårfilé
- 100 g ostronskivling
- 4 msk rapsolja
- 2 st ägg
- 4 st vitlöksklyftor
- 2 dl böngroddar
- 3 st salladslökar
- 1 st morot
- 100 g vitkål
- 4 msk tamarindpasta (kan uteslutas)
- 4 msk fisksås
- 3 msk ljus soja
- 2 msk palmsocker eller strösocker

Instructions
Cooking Mode
- Soak the rice noodles in warm water for about 20 minutes, until they are soft but still firm. Drain the water and set the noodles aside.
- Finely chop the garlic and place it in a bowl. Add the tamarind paste, fish sauce, light soy sauce, palm sugar, and rice vinegar. Stir until the sugar has dissolved.
- Shred the chicken and slice the oyster mushrooms into long, thin strips. Finely shred the carrot and white cabbage.
- Heat a wok or skillet over high heat with half of the canola oil. Sauté the chicken and oyster mushrooms until cooked through. Set aside.
- Add the remaining oil to the pan and crack the eggs directly into it. Stir quickly to make scrambled eggs, then add the soaked rice noodles and the sauce. Stir well so that the noodles are coated with the sauce.
- Return the chicken and oyster mushrooms to the skillet. Add sliced green onions, bean sprouts, white cabbage, and carrots.
- Stir-fry until everything is thoroughly heated, but not for too long so that the vegetables retain their crispness.
- Top the noodle stir-fry with coarsely chopped peanuts, fresh cilantro, and lime wedges.
