Okonomiyaki

A classic Japanese cabbage pancake, served with homemade okonomiyaki sauce and topped with bonito flakes and crispy seaweed chips. Okonomiyaki is a very popular street food dish in Japan that can be varied almost endlessly, but the base always consists of shredded cabbage and eggs. The bonito flakes add a rich umami flavor and dance beautifully when sprinkled over the warm pancake.

Ingredients

  • 400 g white cabbage
  • 2 dl all-purpose flour
  • 2 dl dashi or water
  • 1 tsp baking powder
  • 1 tsp salt
  • 4 eggs
  • 200 g bacon
  • 4 scallions
  • 2 tablespoons gari, pickled ginger
  • neutral oil

OKONOMIAKIS SAUCE

  • 4 tablespoons of ketchup
  • 2 tbsp Worcestershire sauce
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 tsp honey or sugar

SERVING

  • 1 dl bonito flakes
  • 2 scallions
  • 0.5 dl Kewpie mayonnaise
  • 400 g vitkål
  • 2 dl vetemjöl
  • 2 dl dashi eller vatten
  • 1 tsk bakpulver
  • 1 tsk salt
  • 4 st ägg
  • 200 g bacon
  • 4 st salladslökar
  • 2 msk gari, inlagd ingefära
  • neutral olja

  • 4 msk ketchup
  • 2 msk worcestersås
  • 2 msk ostronsås
  • 1 msk soja
  • 2 tsk honung eller socker

SERVERING

  • 1 dl bonitoflingor
  • 2 st salladslökar
  • 0,5 dl Kewpiemajonnäs
Instructions
Cooking Mode
  1. Mix all the ingredients for the sauce in a bowl and place it in the refrigerator.
  2. In another bowl, mix together the wheat flour, dashi, baking powder, and salt. Crack the eggs into the mixture and stir until the batter is smooth.
  3. Cut the bacon into strips and fry it in a dry skillet. Let the bacon drain on paper towels.
  4. Thinly slice the green onion, chop the gari, and finely shred the white cabbage, preferably with a mandoline. Add the white cabbage, gari, and bacon to the batter. Add the green onion as well, but save a little for serving.
  5. Heat a skillet with a little neutral oil over medium heat. Pour in some of the batter and shape it into a round pancake, about 2 cm thick.
  6. Cook the pancake for about 4 minutes until the bottom is golden brown, then carefully flip it and cook for another 4 minutes.
  7. Place the pancake on a plate and drizzle okonomiyaki sauce and Kewpie mayonnaise over it.
  8. Sprinkle with bonito flakes and the reserved scallions.

Serve!

Tip!
If you want to make vegetarian pancakes, simply omit the bacon and bonito flakes. Another tip is to use shrimp instead of bacon. In that case, add the shrimp to the skillet just before you flip the pancake and cook them for a couple of minutes on the other side.
