Dried Seaweed Salad

The seaweed is harvested off the coast of Korea every winter. It contains wakame, agar-agar, kombu, and red gigartina. 20 grams of dried seaweed salad yields 200 grams of prepared seaweed after a quick soak in ice-cold water.

Use it in Asian dishes or in salads. Feel free to season it with Nouc cham, a Vietnamese dipping sauce.
