Crème brûlée with miso and sesame
Ingredients

  • 5 dl whipping cream
  • 1 dl milk (preferably 3%)
  • 1 tsp vanilla paste or 0.5 vanilla bean
  • 2 tbsp light miso paste (shiro miso —not red)
  • 2 tablespoons tahini (preferably light, unsweetened)
  • 0.5 tsp dark-roasted sesame oil
  • 1 lime, grated zest
  • A pinch of salt
  • 5 egg yolks
  • 1 dl granulated sugar
  • Raw sugar for caramelizing (about 1–2 tbsp per mold)
  • SERVING
  • Toasted sesame seeds
  • 5 dl vispgrädde
  • 1 dl mjölk (helst 3 %)
  • 1 tsk vaniljpasta eller 0,5 vaniljstång
  • 2 msk ljus misopasta (shiro miso – inte röd)
  • 2 msk tahini (gärna ljus, osötad)
  • 0,5 tsk Sesamolja mörkrostad
  • 1 st lime, rivet skal
  • En nypa salt
  • 5 äggulor
  • 1 dl strösocker
  • Råsocker till bränning (ca 1–2 msk per form)
  • SERVERING
  • Sesamfrön rostade
Instructions
Cooking Mode
  1. Preheat the oven to 90 degrees. Place 4–6 oven-safe individual ramekins in a deep baking dish.
  2. Heat the cream, milk, vanilla, miso, tahini, sesame oil, lime zest, and salt in a saucepan over medium heat.
    Whisk gently until the miso and tahini have dissolved and the mixture is almost boiling (but not quite). Remove the saucepan from the heat.
  3. Whisk the egg yolks and sugar together in a bowl until the mixture is light yellow and fluffy, about 1–2 minutes.
  4. Pour the warm cream mixture into the beaten eggs a little at a time, stirring constantly so that the eggs don't curdle.
  5. Strain the batter through a fine-mesh strainer to achieve a completely smooth consistency.
  6. Pour the batter into the molds. Fill the baking pan with hot water up to half the height of the molds.
    Bake in the center of the oven for 35–45 minutes, until the batter has just set but is still slightly wobbly in the center.
  7. Remove the molds, let them cool, and then refrigerate for at least 3 hours, preferably overnight.
  8. Sprinkle a thin layer of raw sugar over each brûlée and caramelize with a blowtorch (or under the broiler in the oven, but watch it carefully). Top with a few toasted sesame seeds before serving.
