Apple pie with ginger and panko
Ingredients

  • 5–6 apples, such as Aroma, Ingrid Marie, or Granny Smith
  • 3 tablespoons pickled ginger
  • 1 tbsp butter
  • 1 tbsp fresh grated ginger (for an extra kick)
  • 2 tablespoons raw sugar or granulated sugar
  • 1 tsp cinnamon
  • 0.5 tsp cardamom
  • 1 teaspoon lemon juice
  • TOPPING
  • 1.5 dl Panko breadcrumbs
  • 1 dl rolled oats
  • 0.5 dl all-purpose flour
  • 1 dl granulated sugar or muscovado sugar
  • A pinch of salt
  • 100 g butter
  • SERVING
  • Vanilla ice cream or whipped cream
  • 5–6 äpplen, till exempel Aroma, Ingrid Marie eller Granny Smith
  • 3 msk Ingefära syltad
  • 1 msk smör
  • 1 msk färsk riven ingefära (för extra sting)
  • 2 msk råsocker eller strösocker
  • 1 tsk kanel
  • 0,5 tsk kardemumma
  • 1 tsk citronsaft
  • TOPPING
  • 1,5 dl Panko ströbröd
  • 1 dl havregryn
  • 0,5 dl vetemjöl
  • 1 dl farinsocker eller muscovadosocker
  • En nypa salt
  • 100 g smör
  • SERVERING
  • Vaniljglass eller vispad grädde
Instructions
Cooking Mode
  1. Preheat the oven to 200 degrees on the conventional setting or 180 degrees on the convection setting.
  2. Peel and thinly slice the apples.
  3. Chop the pickled ginger and set aside about 1 tablespoon of the brine.
  4. Lightly sauté the apples in butter in a skillet along with sugar, cinnamon, cardamom, and lemon juice for about 5 minutes, until they soften slightly.
  5. Stir in the pickled ginger and the brine, and any fresh ginger.
  6. Place the filling in a greased pie pan, about 24 cm in diameter.
  7. Mix the panko, rolled oats, flour, brown sugar, and salt in a bowl.
  8. Melt the butter and pour it over the flour mixture. Mix until the mixture becomes crumbly.
  9. Spread the topping evenly over the apples. Press down gently so it sticks.
  10. Bake the pie in the center of the oven for 25–30 minutes, until it turns a nice golden brown and starts to bubble around the edges.
  11. Serve the pie warm with lightly whipped cream or vanilla ice cream.
